Ingredients
- ½ pack soba noodles, cooked till al-dente and shocked in cold water
- ½ red pepper, sliced lengthwise and roasted
- ¼ pack of silken tofu, cubed
- 1 sheet seaweed, ripped into shreds
- 1 Tbs sesame seeds
- 1 tsp scallions, sliced
Miso pumpkin seed butter sauce:
- 1 Tbs miso paste
- 3 Tbs pumpkin seed butter Buy it here
- ½ cup hot water
- 1 tsp honey
- 1 splash soy sauce
- 2 tsp garlic, minced
Steps
- First whisk/blend all the ingredients for the miso pumpkin seed butter sauce together till smooth.
- In a bowl arrange the soba noodles on the bottom then topped with the red peppers, silken tofu, seaweed, sesame seeds and scallions.
- Drizzle with the sauce and toss.
